Apricot Chicken Breast(Cat. Passover) - cooking recipe

Ingredients
    4 whole boned chicken breasts
    1 c. matzo meal
    1 tsp. ground ginger
    1 tsp. garlic powder
    1/2 tsp. salt
    1/4 tsp. white pepper
    2 eggs, well beaten
    1 c. apricot preserves
    1/2 c. wine
    3 Tbsp. pareve margarine
Preparation
    Cut chicken breasts in half.
    Rinse with cold water and pat dry.
    Combine matzo meal with ginger, garlic powder, salt and pepper in shallow dish.
