Potato Fudge - cooking recipe

Ingredients
    3 sq. bitter chocolate
    3 Tbsp. butter
    1/3 c. mashed potatoes
    1/8 tsp. salt
    1 tsp. vanilla
    1 lb. confectioners sugar, sifted
Preparation
    Melt chocolate and butter in top of double boiler.
    Place mashed potatoes, salt and vanilla in mixing bowl.
    Pour melted mixture over potato mixture.
    Mix well.
    Stir in sugar.
    Knead until smooth.
    Press into an 8-inch square pan and cut into squares.
