Marinated Vegetables - cooking recipe

Ingredients
    4 c. assorted fresh vegetables (carrots, cherry tomatoes, cauliflower, mushrooms, broccoli, onion, cucumber, zucchini, etc.)
    1/4 c. lemon juice
    1/4 c. vegetable oil
    1 Tbsp. sugar
    1 tsp. salt
    1/2 tsp. oregano or thyme leaves
    1/8 tsp. pepper
Preparation
    Place vegetables in shallow baking dish.
    In small bowl, combine remaining ingredients; mix well.
    Pour over vegetables. Cover; refrigerate 6 hours or overnight, stirring occasionally.
