Roasted And Marinated Green Beans With Onions And Garlic Cloves - cooking recipe

Ingredients
    3 to 4 Tbsp. olive oil
    1 lb. fresh green beans, cleaned, trimmed and patted dry (you can use any vegetable)
    1 medium size yellow or red onion, cut in thin slices or rings
    6 to 8 medium size cloves garlic, peeled and halved lengthwise
    scant 1/2 tsp. salt
    1 to 2 Tbsp. balsamic vinegar
    freshly ground black pepper
Preparation
    Preheat oven to 400\u00b0. Brush a large baking tray with 2 tablespoons olive oil.
    Spread green beans, onion and garlic on the tray. Salt lightly and drizzle with another tablespoon or two of olive oil. Bake the vegetables for 20 to 30 minutes, interrupting several times to shake the tray or stir briefly. After 20 minutes, taste-test a green bean to see if it's done to your liking. The baking time is somewhat flexible.
    When all the vegetables are tender, remove from the oven and transfer to a bowl.
    Drizzle immediately with vinegar. Apply freshly ground black pepper to taste.
    Serve hot at room temperature or cold. Preparation time:
    10 minutes to prepare, 20 to 30 to bake. Yields about 4 servings.
