Lemon-Asparagus Pilaf(Makes 6 Servings) - cooking recipe

Ingredients
    1 onion
    1 lb. asparagus
    1 Tbsp. butter
    1 Tbsp. olive oil
    3/4 tsp. dried thyme
    1 c. rice
    1 c. chicken stock or canned broth
    1 lemon
    1 1/3 c. water
Preparation
    Chop onion.
    Trim asparagus.
    Melt butter with oil over medium heat.
    Add onion and cook until soft.
    Stir in asparagus and thyme and cook about 1 minute.
    Add the rice and cook, stirring about 1 minute.
    Add chicken stock and water.
    Cover and bring to a simmer. Reduce heat and cook rice about 20 to 25 minutes.
    Grate the colored zest from the lemon and squeeze 1 tablespoon juice.
    Stir in the zest and juice just before serving.
