Veggie Quiche - cooking recipe

Ingredients
    1 (9-inch) deep dish pie crust
    2 Tbsp. butter or margarine
    1 small onion, chopped
    1 green pepper, chopped
    1 small zucchini, chopped (about 2 c.)
    1 c. sliced mushrooms
    1 small tomato, diced
    2 Tbsp. flour
    3 eggs
    1/2 c. milk
    salt and pepper to taste
    1 c. shredded Cheddar and Swiss cheese
Preparation
    Melt butter in a large frying pan.
    Add onion, green pepper, zucchini and mushrooms.
    Cook over medium heat 5 minutes, stirring at times.
    Add tomato and flour.
    Stir to blend flour.
    Beat together eggs, milk, salt and pepper.
    Sprinkle half of cheese in pie shell.
    Add veggies.
    Pour milk mixture evenly over veggies. Sprinkle with rest of cheese mixture.
    Bake at 375\u00b0 for 35 to 40 minutes, or until knife inserted in center comes out clean.
    Makes approximately 6 servings.
    (Recipe also works well using a 1 1/2-quart casserole dish and low-fat cheese.)
