Chicken Long Rice - cooking recipe

Ingredients
    1 1/2 lb. chicken breasts
    1 1/2 Tbsp. oil
    1 clove garlic, minced
    3 c. chicken broth
    1/2 tsp. ginger, minced
    3/4 tsp. salt
    1 bundle long rice
    2 stalks green onion, thinly sliced
Preparation
    Boil chicken pieces (to make broth).
    Set broth aside.
    Skin and debone chicken.
    Cut into pieces.
    Heat oil in skillet; saute chicken and garlic until brown.
    Add broth, ginger and salt. Simmer 1 hour.
    Soak long rice for 30 minutes.
    Add to chicken. Sprinkle with green onions.
    Serves 6.
