Waikiki Coconut Cream Pie - cooking recipe
Ingredients

3/4 c. sugar
1/8 tsp. salt
4 egg yolks
3/4 c. whipping cream
4 Tbsp. cornstarch
2 c. milk
1 tsp. vanilla
1 c. grated coconut
1 baked pie crust
Preparation

Scald the milk. Combine sugar, cornstarch and salt and gradually add to the milk, stirring constantly, until smooth. Cook slowly in top of double boiler, stirring constantly, until it begins to thicken. Beat egg yolks and slowly beat in a few spoonfuls of the hot mixture. Slowly add to the cooking milk mixture.
Continue cooking until thick and smooth.
Cool slightly. Add vanilla and pour into crust.
Whip the cream until stiff and add a few spoonfuls of sugar.
Spread over the pie and sprinkle with the coconut.
