Bev'S Brunch Beauty - cooking recipe

Ingredients
    2 to 3 medium potatoes, thinly sliced, unpeeled
    1 medium onion, thinly sliced
    olive oil
    1/2 c. chopped red roasted peppers
    6 eggs
    1/4 tsp. chopped parsley
    salt and pepper
    1/4 c. milk
    grated Cheddar cheese
Preparation
    Saute potatoes and onions until partially cooked, then add roasted peppers.
    Beat eggs in a bowl with milk, salt, pepper and parsley.
    Add to sauteed mix and cover.
    Cook over medium heat.
    As frittata begins to puff, sprinkle Cheddar cheese on top, cover again and continue cooking until top is firm.
    Serve immediately.
