Potatoes, as needed
Cream cheese, 1 Tbsp. per potato
Butter or margarine, 1 tsp. per potato
Salt and pepper to taste
Milk as needed
Finely chopped chives, as desired
Cheddar cheese
Preparation

Preheat oven to 375 degrees.
Wash potatoes well.
Cut two small slits in each potato, then cook all at once in microwave on High for 7 minutes.
Bake potatoes in preheated oven for 30 minutes. Remove from oven and let stand for 15 minutes.
Cut potatoes in half and scoop out insides, leaving a thin shell.
In a mixing bowl, combine potato insides, cream cheese, butter, salt and pepper, milk and chives.
Mash until smooth.
Spoon mixture into potato shells.
Return potatoes to oven and bake, uncovered, until golden brown, about 15 to 20 minutes.
Top with cheddar cheese.
