Enchilada Pie - cooking recipe
Ingredients

16 oz. cooked ground turkey
1/3 c. diced onion
1 small can Ro-Tel tomatoes
1 c. tomato juice
1 Tbsp. chili powder
pepper and salt to taste
2 c. Minute rice
Preparation

Mix all ingredients together.
Spray a 9 x 13-inch pan and pour in mixture.
Top with 4 ounces shredded Monterey Jack cheese. Bake at 350\u00b0 for 15 to 25 minutes.
Serves 4.
