Smoky Beef Salami - cooking recipe
Ingredients

5 lb. hamburger (max. fat 25%)
2 1/2 tsp. coarse ground pepper or 1 1/2 tsp. ground pepper
2 tsp. garlic salt or garlic powder
2 1/2 tsp. mustard seed
2 tsp. sweet basil
1/4 c. Morton Tender Quick
2 tsp. oregano
1/2 tsp. cumin
2 Tbsp. liquid smoke
Preparation

Mix all ingredients.
Cover and refrigerate for 24 hours. Divide mixture and roll into logs.
Wrap logs with nylon net or cheesecloth.
Bake in oven in broiler pan with rack at 225\u00b0 for about 4 hours or at 150\u00b0 for about 9 hours or at 140\u00b0 for about 11 hours, or microwave about 1 hour at Defrost setting.
Turn occasionally while baking.
