Low-Fat Low Sodium Potato Soup - cooking recipe

Ingredients
    2 large potatoes, baked
    2 c. skim milk
    1/4 c. onion, finely chopped
    2 tsp. vegetable oil
    1 c. frozen chopped broccoli, cooked and drained
    1/4 tsp. salt
    1/4 tsp. ground pepper
    1 c. grated Cheddar cheese, reduced fat
Preparation
    Cook onion in oil, stirring frequently, until softened but not browned.
    Scoop potato from skins.
    Puree one potato and milk in blender until smooth.
    Pour into saucepan.
    Add onion, remainder of potato, salt and pepper.
    Heat to simmering over medium heat. Stir in cheese until melted.
    Serve immediately.
    Makes 3 servings, 1 cup each.
