Summer Sausage - cooking recipe

Ingredients
    5 lb. ground meat (cheap)
    1/4 c. Morton Tender Quick salt
    3 to 4 Tbsp. liquid smoke
    1 tsp. coarse black pepper
    1 Tbsp. red pepper flakes
    1 Tbsp. mustard seed
Preparation
    Mix seasonings an meat until \"mushy.\"
    Cover and refrigerate 24 hours.
    Remove from refrigerator and shape meat mixture into 4 loaves approximately 2 1/2 inches in diameter and 9 inches long. Be sure to compress the loaves to get all the air out.
    Bake in roaster pan on drip rack for 4 hours at 225\u00b0.
    After 2 hours, turn loaves over.
    Let cool.
    Wrap in foil and refrigerate.
