Old Fashioned Rice Pudding - cooking recipe

Ingredients
    4 c. milk
    1/2 c. regular long grain rice
    1/3 c. sugar
    1/4 tsp. salt
    2 eggs
    1 tsp. vanilla extract
Preparation
    In a 4-quart saucepan, heat the first 4 ingredients until boiling.
    Reduce heat; simmer, covered, until rice is tender, stirring occasionally (45 minutes to 1 hour).
    In small bowl, beat the eggs slightly; stir in small amount of hot rice mixture. Slowly pour egg mixture back into rice mixture, stirring rapidly to prevent lumping.
    Cook, stirring constantly, until thickened, about 5 minutes (do not boil).
    Remove from heat.
    Stir in the vanilla extract.
    Cool in refrigerator until chilled, about 2 hours.
    Serves 6.
