Onion-Tomato Frittata - cooking recipe

Ingredients
    2 large onions, sliced
    3 Tbsp. plus 1 tsp. olive oil
    1/2 c. diced, fresh or frozen green pepper
    10 eggs
    1/3 c. Parmesan cheese, grated
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. bread crumbs
    1/2 tsp. oregano
    1 clove garlic, chopped
    3 to 4 ripe tomatoes, thinly sliced
    4 oz. thinly sliced Mozzarella
Preparation
    Saute onions in 3 tablespoons oil in 10-inch skillet with heat resistant handle, until tender.
    Saute green pepper 1 minute.
    Beat eggs, 1/4 cup cheese, salt and pepper in large bowl.
    Add to skillet; cook over medium-low heat, lifting bottom with spatula as eggs set, about 3 minutes.
    Bake in preheated oven at 350\u00b0, uncovered, for 10 minutes or until top is almost set.
