Chicken Mozzarella - cooking recipe
Ingredients

8 chicken breasts, skinned, halved and flattened into a cutlet shape, dust lightly with flour
2 eggs
2 Tbsp. water
1 c. bread crumbs
1 c. Parmesan cheese
1/4 tsp. garlic powder
2 Tbsp. paprika
1 can tomato sauce (15 oz.)
1/2 lb. Mozzarella cheese, grated
oil for frying
Preparation

Beat eggs with water and set aside.
Combine crumbs, Parmesan cheese, garlic powder and paprika.
In large skillet, heat oil (about 1/2 inch).
Dip chicken breasts into the egg mixture and then into crumb mixture.
Fry chicken in the hot oil until golden brown on both sides.
Remove chicken to a 9 x 13-inch pan.
Lay chicken in one layer in pan.
Drizzle tomato sauce over chicken. Sprinkle Mozzarella cheese evenly over top.
Sprinkle top with additional Parmesan cheese.
Bake in 350\u00b0 oven for 30 minutes or until piping hot and cheese is melted and lightly browned.
Serves 8.
