Ingredients

4 c. cooked rice
1/2 c. ground pecans or hazelnuts
1 egg, beaten
2 1/2 c. (20 oz.) shredded Swiss cheese, divided
1/2 c. grated Parmesan cheese, divided
2 Tbsp. olive oil
1 whole Concord Farms duck breast, halved, boned, skinned and cut into bite size pieces
1 small sweet onion, cut into thin rings
1 small green pepper, cut into thin rings
1 small red pepper, cut into thin rings
4 oz. fresh mushroom caps, thinly sliced
1/2 c. pitted ripe olives, sliced
1 1/3 c. pizza sauce
1 tsp. each Italian seasoning, fresh chopped mint and fresh chopped basil
Preparation

Preheat the oven to 375\u00b0.
Combine rice, pecans, egg, 1/2 cup of the Swiss cheese and 1/4 cup of the Parmesan cheese in a large bowl. Grease a 12-inch pizza pan.
Evenly press rice mixture onto bottom and up side of pan to create a 1/2-inch rim. Bake 10 to 12 minutes.
Set aside to cool.
