Potaje (Thick Soup) One Pot Meal - cooking recipe

Ingredients
    2 c. dry Great Northern beans
    1 large onion, chopped
    1/2 lb. smoked sausage, sliced
    1 lb. short beef ribs or chuck, cut up
    3 medium red or white potatoes, cut up
    1 large bunch collard greens, chopped
    1/2 Tbsp. salt
    dash of black pepper
Preparation
    In
    3
    quarts
    of water, boil beans, onion, sausage and beef meat
    for about 1 hour or until beans and meat are almost cooked. Add
    potatoes
    and cook 20 minutes more.
    Add greens, salt
    and pepper
    and
    cook about 15 minutes until greens are cooked.
    Serve with French bread or hard rolls.
