Reuben Quiche - cooking recipe
Ingredients

1 (16 oz.) can sauerkraut, drained and rinsed
2 tsp. caraway seed
1/4 lb. corned beef, thinly sliced
1/4 lb. Gruyere or Swiss cheese, thinly sliced
1 c. half and half, warmed
2 eggs, slightly beaten
1 pastry shell (made or purchased)
Preparation

Squeeze small handfuls of sauerkraut to extract all moisture. Saute kraut in butter in skillet until it begins to brown and is covered in butter.
Add caraway seed.
Put kraut in prepared pie shell.
Top with corned beef; top that with cheese slices.
Pour custard of milk and eggs over everything.
Bake in preheated 375\u00b0 oven for 40 to 45 minutes, or until custard is set.
Serves 4 adults.
