Skillet Breakfast - cooking recipe
Ingredients

2 Tbsp. oil
2 medium potatoes
5 eggs, well beaten
1/2 c. shredded Swiss or Cheddar cheese
1/2 c. diced, cooked chicken or turkey
2 Tbsp. chopped onion
1 tsp. lemon pepper
Preparation

Slice potatoes (with or without skins) thinly.
Cook in large skillet in oil over medium heat.
Turn once, arranging potatoes to cover bottom of pan.
Pour 1/2 of eggs over crust.
Sprinkle with lemon pepper, onion, chicken and cheese.
Pour remaining eggs evenly over top.
Reduce heat to low so potatoes don't burn. Cover skillet with lid for 15 to 25 minutes until eggs are completely cooked.
Flip onto platter to serve.
