Fiesta Shrimp Tacos - cooking recipe
Ingredients

1 c. (5 oz.) crumbled California Cotija cheese
1/2 c. chopped cucumber
1/4 c. chopped red onion
1/4 c. chopped tomato
1 jalapeno pepper, seeded and minced
3 Tbsp. vegetable oil, divided
1 Tbsp. chopped fresh cilantro
1/2 tsp. black pepper
1/2 lb. peeled and de-veined medium shrimp
2 tsp. ground cumin
2 c. shredded iceberg lettuce
8 corn taco shells or tortillas
lime wedges
Preparation

Salsa:
Combine Contija cheese, cucumber, onion, tomato, jalapeno pepper, 2 tablespoon oil, lime juice and cilantro. Season with pepper.
Set aside.
