Cajun Shrimp Okra Gumbo - cooking recipe

Ingredients
    2 lb. peeled & deveined shrimp
    3 tbsp. oil
    3 tbsp. flour
    1 1/2 lb. sliced okra
    1 small diced onion
    2 qt. water
Preparation
    First, make a roux.
    Pour the oil in the bottom of the pot. After the oil is well heated over a low fire add flour.
    Cook the flour very slowly stirring almost constantly.
    Cook about 45 minutes.
    The flour must be browned to a very dark brown.
    Add okra, onion, and cook 30 minutes.
    Add shrimp then stir in 2 quarts water. Cook for one hour on medium heat.
    Salt & pepper to taste.
