Mexican Casserole - cooking recipe
Ingredients

1 box chicken flavored Rice-A-Roni
1 medium onion, chopped
4 medium jalapeno peppers, chopped
2 chicken bouillon cubes, crushed
1/4 tsp. garlic powder
1/2 c. salsa (medium or hot)
Preparation

Prepare Rice-A-Roni as package directs to the point of adding the water.
After adding water, add onion, peppers, salsa, bouillon and garlic powder.
Mix well.
Cook as package directs. Meanwhile, brown 1 pound ground beef; season to taste with salt, pepper and garlic powder.
Drain.
Add 1 can red beans (drained) and 1 can whole kernel corn (drained).
Stir to mix and simmer 5 minutes.
When rice is done, mix meat mixture and rice together. Break tortilla chips in bite-sized pieces to make 2 cups.
Gently fold in rice mixture.
Sprinkle top of casserole with one cup shredded Cheddar cheese.
Place in oven for 10 to 15 minutes or until cheese is melted.
Serve hot.
