Easy Chicken Gumbo - cooking recipe
Ingredients

1 (1 lb.) can cut okra, drained
1/4 c. chopped onions
1/4 c. chopped green pepper
3 Tbsp. butter or margarine
4 c. consomme or chicken broth
1 (1 lb.) can tomatoes
1 small bay leaf
salt and pepper
1 c. diced cooked chicken
1 Tbsp. minced parsley
3 c. hot cooked rice
Preparation

In a large saucepan cook and stir okra, onions and green peppers in butter over low heat until onion is tender.
Stir in consomme, tomatoes and bay leaf.
Simmer 15 minutes.
Season to taste with salt and pepper.
Stir in chicken and parsley; heat through.
Serve in bowls with scoops of rice.
Makes 6 servings.
