Cream Of Broccoli Soup - cooking recipe
Ingredients

1 lb. broccoli
2 tsp. salt
3 c. boiling water
1 stick butter
3 Tbsp. flour
3 c. milk
1 tsp. grated onion
4 to 6 oz. cheese
Preparation

Cook broccoli in salted water for 10 to 12 minutes or until tender.
Crush until well broken up, but not a puree.
There should be 2 1/2 cups of crushed broccoli and cooking water. In large pot, heat butter, blend in flour and add milk, stirring until sauce boils and thickens.
Then add salt to taste, onion, cheese and crushed broccoli.
Reheat to boiling.
Serve and enjoy.
