2 c. pecan halves
1 c. sugar
3/4 c. corn syrup
1 c. whipping cream
4 Tbsp. butter
1 1/2 c. chocolate chips, melted
Preparation

On a baking sheet, arrange pecan halves in sets of 3, laying 2 side by side and 1 across the top; set aside. Combine sugar, corn syrup and 1/2 cup whipping cream in a heavy saucepan; heat over medium heat, stirring constantly until mixture reaches a full boil. Slowly add remaining cream and butter; heat until mixture reaches the soft boil stage or 240\u00b0 on a candy thermometer. Cool; spoon a desired amount of caramel mixture on top of each set of pecans. Let set; dip in melted chocolate. Refrigerate to harden. Makes 2 to 3 dozen.
