Pumpkin Spice Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
1/2 tsp. nutmeg
1/2 tsp. salt
3/4 c. flour
1 tsp. soda
2 tsp. cinnamon
1 tsp. ginger
1 c. chopped pecans
1 c. powdered sugar
6 oz. cream cheese
4 Tbsp. butter
1/2 tsp. vanilla
Preparation

Beat eggs 5 minutes (until foamy).
Gradually add sugar, stir in pumpkin and lemon juice.
Sift dry ingredients and fold in (do not use mixer).
Coat large cookie sheet with Pam, spread mixture in pan and top with nuts.
Bake 15 minutes at 375\u00b0.
Turn out on (powdered sugar) towel (don't let cool in pan).
Roll towel and cake together, let cook, unroll, remove towel, spread on filling, roll back up and chill.
