Cauliflower-Leek Puree(Low Carb Mashed Potato Alternative) - cooking recipe

Ingredients
    1 head cauliflower, separated into florets
    1 leek, washed & cut into 1-inch slices (use white and 1-inch of green)
    3 T low fat margarine/butter
    3 T fat free creamer
    1/8 tsp. nutmeg (optional)
    salt and pepper to taste
Preparation
    Cook Cauliflower and leek in salted water until very soft (approx 15 min.).
    Drain.
    Return veggies to pot to heat and dry. Place 1/2 of veggies plus 1/2 of remaining ingredients in food processor.
    Process until smooth.
    Repeat with rest of mixture.
