Pork Tenderloin And Mushrooms - cooking recipe

Ingredients
    1/2 c. soy sauce
    1 clove garlic mashed
    2 tsp. fresh grated ginger or 1/2 tsp. powdered
    2 Tbsp. brown sugar
    2 Tbsp. salad oil
    1 1/2 lb. pork tenderloin, cut in 1-inch strips
    1 1/2 lb. fresh mushrooms, sliced
Preparation
    Combine soy sauce, garlic, ginger and brown sugar.
    Heat oil in frying pan until very hot.
    Stir and fry the meat until lightly browned on all sides(3 to 5 minutes).
    Add the soy mixture and stir until blended.
    Cover and cook over medium heat for 15 minutes.
    Add the mushrooms; turn heat to high and stir-fry and cook until mushrooms are tender (about 5 minutes).
    Liquid will be almost all absorbed.
    Serve over rice.
    Makes 4 servings.
