Wild Rice Chickpea Shrimp Salad - cooking recipe
Ingredients

2/3 c. uncooked rice
1 tsp. thyme leaves
12 oz. large cooked shrimp
1 (6 oz.) can pitted black olives
1 (16 oz.) can chickpeas
1 sweet red onion, thinly sliced
1 jar (2 oz.) sliced pimento, drained
crisp lettuce
lemon vinaigrette
Preparation

Cook rice with thyme added to water.
In large bowl, combine the cooked rice, shrimp, olives, chickpeas, onion and pimento. Pile into individual lettuce cups or serve in lettuce lined salad bowls.
Drizzle with lemon vinaigrette.
(Chickpeas and garbanzo beans are two names for the same thing.)
Yields 8 servings.
