Sole Poached With Tomatoes, Artichokes And Mushrooms - cooking recipe

Ingredients
    1 Tbsp. butter (or use small amount chicken broth)
    1 1/2 c. thickly sliced mushrooms
    1 clove garlic, finely chopped
    3 tomatoes, cut in chunks
    1 tsp. basil
    1 tsp. thyme
    1 (14 oz.) can artichoke hearts (waterpacked), drained and quartered
    salt and pepper
    1 lb. sole fillets
Preparation
    In heavy saucepan or skillet, melt butter (or substitute chicken broth); cook mushrooms and garlic over medium-high heat, shaking pan or stirring until mushrooms are tender.
    Add tomatoes, basil and thyme, bring to a simmer for 3 minutes.
    Uncover and cook 5 minutes longer until fish is opaque.
    Season with salt and pepper to taste.
