Down Home Rice - cooking recipe

Ingredients
    2 c. long grain rice, cooked
    1 lb. mild sausage
    1 small sweet chopped onion
    1 (10 oz.) can Ro-Tel
    1 (15 oz.) whole kernel corn, drained
    1 (10 3/4 oz.) can cream of mushroom soup
    1/2 lb. Velveeta cheese
    1 (10 oz.) jar sliced mushrooms
    2 c. shredded Cheddar cheese
Preparation
    Preheat oven to 375\u00b0. Brown sausage and onion in skillet, then drain. Combine sausage, corn, Ro-Tel, cream of mushroom soup, Velveeta cheese, sliced mushrooms and rice. Pour in 9 x 13-inch baking dish. Bake in oven for 30 minutes. Remove dish and sprinkle top with shredded Cheddar cheese. Place back in oven for 10 to 15 minutes, until cheese melts.
