Enchilada Casserole - cooking recipe
Ingredients

18 corn tortillas, fried until soft in oil
2 c. cooked meat (chicken or turkey)
1 can stewed tomatoes
1 can cream of celery soup
12 oz. shredded Cheddar cheese
seasonings to taste (cumin, onion flakes, garlic, paprika and chili powder)
Preparation

Mix chicken (cooked turkey or ground beef may be used), soup, tomatoes and seasonings.
Layer, starting with chicken mixture, then tortillas, then cheese in ovenproof casserole.
Bake at 350\u00b0 until cheese is bubbly.
Serve with sour cream and a lettuce and tomato salad.
