Ingredients

4 c. milk
2 c. sugar
1/2 tsp. salt
3 to 4 Tbsp. cornstarch, dissolved in cold water
3 beaten eggs
2 tsp. vanilla
2 Tbsp. butter
2 c. coconut
whipped cream or Cool Whip
Preparation

Bake a pie crust dough in a 9 x 13-inch pan.
Let cool. In top of
double
boiler,
heat\tmilk, sugar and salt.
When mixture is hot,
thicken with cornstarch.
Add and stir until thick.\tAdd eggs, stirring into mixture.
Cool 4 to 5 minutes longer, stirring.
Add
vanilla, butter and coconut, stirring well.
Put into
cooled
pie
shell.
Chill.
Top with either whipped cream or Cool Whip and sprinkle with toasted coconut.
