Melt-In-Your-Mouth Potato Casserole - cooking recipe
Ingredients

4 to 5 medium Irish potatoes
1 medium onion, chopped
salt and pepper
1 c. sharp Cheddar cheese, grated
1/2 pt. whipped cream
Preparation

Boil unpeeled potatoes in unsalted water until tender.
Allow to cool, then peel.
Grate on coarse side of a grater.
In a greased 2-quart baking dish, make a layer of half the potatoes and half the onions, then salt and pepper.
Repeat with potatoes and onions.
Salt and pepper again heavily.
Sprinkle cheese over top and pour cream over all.
Cover with aluminum foil and bake at 350\u00b0 for 45 minutes.
