Winter Squash Muffins - cooking recipe

Ingredients
    3/4 c. cooked, mashed, winter squash
    3/4 c. cooked, mashed apple
    3 Tbsp. brown sugar
    1/4 c. oil
    1 to 2 eggs, beaten
    finely grated peel of one lemon
    2 tsp. baking powder
    1 tsp. cinnamon
    1 tsp. salt
    1 3/4 c. flour
Preparation
    Preheat oven to 400\u00b0.
    Combine squash, apple, brown sugar, oil, egg and lemon peel.
    (If squash and apple are freshly cooked, let them cool before adding egg.)
    Sift flour, baking powder, cinnamon and salt.
    Fold into squash mixture.
    Pour into greased muffin tins.
    Bake 20 to 25 minutes.
