Cheesy Potato Casserole - cooking recipe

Ingredients
    7 medium potatoes (about 2 lb.), unpeeled
    1/4 c. butter or margarine, melted
    1 small onion, chopped
    1 tsp. salt
    1/4 tsp. pepper
    1 (8 oz.) carton sour cream
    1 (10 3/4 oz.) can cream of chicken soup, undiluted
    2 c. (8 oz.) shredded Cheddar cheese
    3 Tbsp. melted butter or margarine
    1 1/2 c. herb stuffing mix
Preparation
    Cook potatoes in boiling water 30 minutes or until tender. Drain; let cool.
    Peel and cut into 1/4-inch strips.
    Set aside. Combine 1/4 cup butter and next 5 ingredients in large bowl. Gently stir in potatoes and cheese.
    Spoon into lightly greased 13 x 9 x 2-inch baking dish.
    Combine 3 tablespoons butter and stuffing mix.
    Sprinkle over potato mixture.
    Bake uncovered for 25 minutes.
