Cauliflower Salad - cooking recipe
Ingredients

1 medium head iceberg lettuce (about 2 1/2 lb.), torn into bite size pieces
4 c. cauliflower florets
1 c. thinly sliced red onion, separated into rings
3/4 c. reduced calorie mayonnaise
1/3 c. each: grated Parmesan cheese and imitation bacon bits
Preparation

Line bottom of large shallow bowl with lettuce; top with cauliflower florets and onion slices.
Using a rubber scraper, spread mayonnaise over entire surface of salad.
Sprinkle with Parmesan cheese and bacon bits (do not toss).
Cover with plastic wrap and refrigerate overnight.
Just before serving, toss salad to combine.
