Baked Chicken Parmesan - cooking recipe
Ingredients

1/2 c. salad oil
3 broiler-fryers, cut up (6 lb. total)
1 1/2 tsp. oregano, divided
1 1/2 tsp. salt, divided
paprika
2 (4 oz.) cans sliced mushrooms
4 Tbsp. grated Parmesan cheese
Preparation

Line a 15 x 10 x 1-inch pan with aluminum foil.
Pour oil into pan; place in a 425\u00b0 oven to heat for 10 minutes.
Remove pan. Place chicken, skin side down, in hot oil.
Sprinkle lightly with 1/2 the oregano, salt and paprika.
Return pan to oven; bake at 425\u00b0 for 30 minutes.
Turn chicken; sprinkle lightly with remaining oregano, salt and paprika.
Bake 15 minutes longer. Remove from oven and spoon drippings over chicken.
Pour mushrooms with liquid over chicken; sprinkle with Parmesan cheese.
Bake for 5 minutes.
Yields 12 servings.
