Holiday Scampi - cooking recipe

Ingredients
    36 med. shrimp, cooked. approx. 1 lb.
    1 Tbsp. olive oil
    2 c. red bell pepper strips
    1 c. green bell pepper strips
    1/4 c. chopped parsley
    1 Tbsp. chopped scallion
    2 cloves garlic minced
    2 Tbsp. fresh lemon juice
    2 Tbsp. balsamic vinegar
    2 tsp. dried basil, or 1/4 cup fresh, finely chopped
Preparation
    In a large non stick skillet at medium heat, warm the olive oil.
    Add peppers and 2 Tbsp. parsley, scallion and garlic.
    Saute until vegetables are tender, 4 to 5 minutes.
    Add shrimp, lemon juice, vinegar and basil.
    Stir fry one or two minutes.
    Sprinkle with remaining parsley.
    Serves 6.
