Colcannon - cooking recipe

Ingredients
    1 1/2 lb. potatoes
    1/3 c. butter or margarine
    2 c. shredded cabbage
    6 scallions, sliced
    1/3 c. milk
    salt and pepper
Preparation
    Clean, pare and quarter potatoes.
    Cook in unsalted water for about 15 minutes, or until tender.
    While potatoes are cooking, melt butter in saucepan.
    Add cabbage and scallions.
    Cover; cook over low heat until tender, about 5 or 10 minutes.
    When potatoes are done, drain well and mash.
    Gradually add hot milk; beat until fluffy.
    Sprinkle with salt and pepper to taste, mixing well.
    Add cabbage and scallions to mashed potatoes; turn into serving dish. Makes 6 servings.
