Jellied Cucumber Salad - cooking recipe
Ingredients

1 (4 oz.) box sugar-free lime Jell-O
1 c. boiling water
1 medium cucumber, grated (undrained)
1 small onion, grated (undrained)
1 (8 oz.) container low-fat cottage cheese (undrained)
1 (8 oz.) container lite sour cream
Preparation

Mix the first 2 ingredients and set aside.
Mix last 4 ingredients well; mix with Jell-O well.
Pour into salad mold or any container (depending on whether you plan to slice or spoon out servings).
Refrigerate until jelled.
Serves 6 to 8.
