South American Beans And Rice - cooking recipe

Ingredients
    2 c. black beans or pinto beans
    1 c. long grain rice
    1 c. chopped onion
    1/2 c. chopped celery
    2 c. chicken broth
    2 tsp. crushed red pepper
    3 cloves garlic, minced
    1 c. chopped, fresh tomato
    1 c. low-fat ham, chopped or low-fat sausage (optional)
Preparation
    Spray a large, heavy skillet with Pam.
    Saute garlic and onion until transparent.
    Add celery and cook for 1 minute.
    Add rice and chicken broth.
    Bring to a boil, cover and cook for 10 minutes.
    Add beans, red pepper and meat, if using.
    Cover tightly and simmer until all liquid is absorbed.
    Right before serving, stir in 1 cup of chopped, fresh tomatoes.
    Serves 6 to 8.
