Garden Fresh Pasta - cooking recipe

Ingredients
    4 oz. uncooked angel hair pasta
    2 garlic cloves, minced
    2/3 c. chicken broth
    2 tsp. Dijon mustard
    2 Tbsp. grated Parmesan cheese
    1 Tbsp. olive oil or oil
    1/2 c. sliced green onions
    1 medium tomato, seeded and chopped
    1/2 c. chopped arugula leaves or fresh spinach
Preparation
    Cook pasta to desired texture as directed on package.
    Drain. Keep warm.
    Meanwhile, heat olive oil in large skillet over medium heat.
    Add green onions and garlic.
    Cook until onions are crisp-tender, stirring frequently.
    Add pasta, tomato, chicken broth and mustard.
    Cook 2 to 3 minutes or until thoroughly heated. Remove from heat.
    Add arugula and Parmesan cheese.
    Toss.
    Serve immediately.
    Yields 6 (1/2 cup) servings.
