Spicy Rice With Black-Eyed Peas - cooking recipe

1 (10 oz.) pkg. frozen black-eyes peas
3/4 c. uncooked instant rice
1/2 c. chopped onion
1/4 c. chopped red bell pepper
1 Tbsp. chopped fresh or 1 tsp. dried oregano
1/8 tsp. salt
1/8 tsp. cayenne pepper
1 clove garlic, finely chopped
1 (16 oz.) can whole tomatoes (undrained)
Preparation

Cook peas as directed on package using 10-inch nonstick skillet; drain.
Stir in remaining ingredients; break up tomatoes. Heat to boiling; reduce heat.
Cover and simmer about 10 minutes or until liquid is almost absorbed.
