Granny Sims White Fruit Cake - cooking recipe

Ingredients

1 lb. candied pineapple
1 lb. candied cherries
1/2 lb. citron
1/2 lb. white raisins
1/2 lb. orange and lemon peel
1/2 lb. Brazil nuts
1 lb. pecans
1/2 lb. walnuts
2 c. sugar
2 1/3 sticks butter
9 eggs
4 1/2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ginger
1 1/2 tsp. nutmeg
1 1/2 tsp. allspice
1 Tbsp. cinnamon
1 c. white wine
1 c. strawberry jam

Preparation

Cut fruits and nuts coarsely and flour with 1 cup of flour (reserve some fruits and nuts whole for decorating).
Cream sugar and butter in mixer; add eggs 1 at a time.
Add flour, spices and wine, alternating.
Add jam and stir.
Add fruits and nuts; stir. Preheat oven to 250\u00b0.
Grease 2 tube pans and line with brown paper bag.
Bake 3 hours.
Decorate 1 hour before done.
Let stand in pans overnight.
