Eggplant Casserole - cooking recipe

Ingredients
    2 small eggplant, boiled and mashed
    1 pkg. Pepperidge Farm stuffing
    1 large onion
    1 large bell pepper
    1 can mushroom soup
    1 can water
    2 eggs, beaten
    celery
Preparation
    Brown stuffing in skillet. Add remaining ingredients and mix well. Top with cheese.
    Bake at 350\u00b0 for 45 minutes.
    Serves 4 to 6.
