Pasta With Fresh Tomatoes, Basil And Parmesan - cooking recipe
Ingredients

12 oz. Radiatore pasta
1/4 to 1/2 c. olive oil (light)
2 to 3 Tbsp. freshly squeezed lemon juice
1 1/2 c. chopped, fresh basil
3 c. chopped ripe Italian plum tomatoes
1/4 c. fresh grated Parmesan cheese
salt and pepper to taste
Preparation

Cook pasta until very al dente.
Drain and toss with olive oil and lemon juice.
Cool to room temperature and toss to coat thoroughly.
Add basil, tomatoes, cheese, salt and pepper to taste.
Garnish with basil leaves.
Tastes best when made on the day to be served.
Serves 8 to 10 as a salad.
