Quick Minestrone Soup - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 medium onion, chopped
    1 garlic clove, minced
    1 (46 oz.) can V-8 juice
    1 (16 oz.) can mixed vegetables or 1 (16 oz.) pkg. frozen mixed vegetables, drained
    2 c. cooked pasta shells (1 c. uncooked)
    1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
    grated Parmesan cheese
Preparation
    Heat vegetable oil in large pan.
    Add onion and garlic; heat 2 minutes.
    Stir in vegetable juice; bring to boil.
    Cover, reduce heat and simmer 10 minutes.
    Add mixed vegetables, pasta and spinach.
    Cover; simmer 10 minutes.
    Sprinkle with cheese before serving.
    Makes 8 servings.
